What is porridge?
Porridge is typically made of starchy grains. Its cooked in water or milk until its thick and creamy. Porridge is also sometimes referred as hot cereal.
Oatmeal vs Porridge
Oatmeal is a type of porridge. Even though oatmeal is considered porridge, all porridge is not oatmeal. Porridge can be made with cream of wheat, semolina, amaranth and also oats.
Oats are versatile and can used in many varieties of recipes. I love to bake chocolate chip cookies for dessert and school snacks. My masala oatmeal which is a savory Indian style morning meal is everyone’s favorite. Oats are great addition to smoothies and caramel protein smoothie is the easiest to blend and devour. Overnight oats have recently become very popular and its super convenient for busy mornings.
Health benefits of pumpkin
First of all pumpkin is a fruit. Its low in calories and helps in good eye health. Its a great source of antioxidants and helps to boost immune system.
Apple pumpkin cookies are the most delicious fall treat. Quinoa pumpkin cake is excellent to enjoy pumpkin. I love pumpkin brownies and often enjoy pumpkin smoothie for my post workout snack. For mid-morning or evening beverage I absolutely love my pumpkin latte.

Oats – old fashioned rolled oats are the best but steel cut oats can also be used. However, the cooking time may vary since steel cut oats take more time to cook.
Almond milk – I like to use almond milk because its light and low in calories. But any plant milk except coconut milk works in this healthy pumpkin oatmeal.
Pumpkin Puree – Canned pumpkin puree is absolutely great and convenient to use here. However, nothing beats a homemade pumpkin puree.
Pumpkin Pie Spice – This adds to the Fall flavors and its aroma. However, you may substitute it with a combination of few spices like cinnamon, cardamom, nutmeg.
Peanut Butter – This adds protein, healthy fats and lots of delicious flavors.
Maple syrup – A little addition of sweetener makes this pumpkin spice oatmeal absolutely delicious.

How to make
Firstly, in a stockpot, I combined almond milk and water at a high heat.
Secondly, at the first boil, I stirred in pumpkin puree, peanut butter, spice and salt. I stirred it at medium heat until the peanut butter melted.
Next, I added oats to it.
Thereafter, I continuously stirred it for 2 minutes at medium heat. As soon as it started to thicken I stirred in maple syrup and simmered over medium heat for 3-4 minutes until I achieved the creamy yet pouring consistency.
Lastly, I spooned it out in the serving bowls and garnished with nuts seeds and drizzled some syrup.
It tasted heavenly and we enjoyed every bite of this delicious warm oatmeal bowl.
Serving tips
This pumpkin oatmeal is complete in itself when garnished with nuts and seeds. You may drizzle some maple syrup for a sweet flavor. However, to make it a complete meal, you may serve matcha latte with it.
Storage tips
This tastes best when served immediately. However, the leftovers can be refrigerated in an air-tight container for about 3-4 days.
Reheat: You may enjoy it thick by just warming it in microwave. Or you may add little almond milk as per your desired consistency and warm it up.
Expert tips
- Do not cook this at high heat. Once the liquid is boiled bring the flame to medium heat.
- It is important to continuously stir to get the creamy starchy texture.
- Make sure that peanut butter is completely melted before adding other ingredients.
Even though oats are naturally gluten-free it could be contaminated during processing. So, its best to check the label and make sure its certified gluten-free.
I recommend cooking this pumpkin porridge on the stove stop because the right consistency of this recipe is best achieved when cooked on the stove top. In the microwave it might become too dry or too thin and the measurement of ingredients vary as well.

Vegan Pumpkin Oatmeal Porridge
Ingredients
- 1 1/2 cups unsweetetend almond milk
- 3/4 cup water
- 3/4 cup pumpkin puree
- 2 tbsp creamy peanut butter
- 1 tsp pumpkin pie spice
- Pinch of salt
- 1 cup old fashioned rolled oats
- 2 tbsp maple syrup
Suggested Garnishes
Instructions
- In a stockpot or a saucepan, combine almond milk and water at a high flame.
- At the first boil, stir in pumpkin puree, peanut butter, pumpkin pie spice and salt. Bring the flame to medium heat and stir continuously until peanut butter melts completely. (This may take about 3-4 minutes).
- Add oats and stir at medium heat for about 2 minutes. Once it starts to thicken stir in maple syrup. Then, at low-medium flame stir continuously until it's thick, creamy yet pouring consistency. (This may take about 3-4 minutes).
- Remove from heat and spoon it out in the serving bowls. Garnish with your choice of nuts and seeds and serve immediately.
Notes
- This tastes best when served immediately but the leftovers can be refrigerated in an air-tight container for about 3-4 days. Warm it up in the microwave as is or add some almond milk depending on your choice of consistency and warm it on the stove top.
- If you add almond milk while warming it then adjust the spice and sweetener as per your taste.
