As spring approaches vitamin c becomes an integral part of our diet in order to boost our immunity. So, what can be better than a glass of vegan lemon smoothie.

I love baking lemon cookies and my lemon bars are quite famous. Hence, these are also great to boost your energy along with some dessert satisfaction.

Breakfast is important for metabolism to get started right at the beginning of the day. It also helps in keeping you energized all day. So, I always like to start my day with something nutritious that has balanced macros and micros. However, at the same time, I like it when it is quick and fast, hence smoothies are my favorite go to morning meal.

Health benefits of lemons

There are many health benefits of lemons apart from being the best source of vitamin c. It helps in weight management and prevents kidney stones. It’s heart healthy food and helps improve digestion. They also facilitate iron absorption along with boosting immunity.

Therefore, I love to blend this easy peasy cake like lemon protein smoothie and we all devour every sip of it.

Ingredients for lemon smoothie recipe

Lemons
Oat/hemp milk
Banana
Dates
Hempseeds
Cashew nuts
Turmeric

I have used these easy 7 ingredients here and it’s a one step beverage for the whole family to enjoy. Even kids enjoy its sweet and tangy flavors.

Ingredients notes:

Lemons – gorgeous yellow large lemons work best here.

Dairy free milk – hemp milk has higher protein content than oat milk but both works great here.

Banana – make sure to use ripe banana that has brown spots on its skin but not over ripe ones.

Dates – this helps in adding more fiber and are also the best sweetener in this dairy free lemon smoothie

Hempseeds – I added this to include protein in here along with some healthy fats and fiber.

Cashew nuts – this adds a nice thick creamy base which makes it even more delicious.

Turmeric – we know that its full of medicinal properties and plus it gives a nice hint of its beautiful color.

How to make Lemon Smoothie

Firstly, in a blender, I combined lemon juice along with its zest, milk, banana, dates, cashew nuts, turmeric and hempseeds.

Secondly, I blended it smooth until it was creamy.

Lastly, I poured it in the serving glasses.

I added some crushed ice for my daughter and some extra hempseeds for myself. We loved it and immediately gulped it.

In fact, I immediately blended another batch of it so that my husband gets a chance to try it.

We all loved it and since then I have been blending this for our mid-morning snack every day.

Lemon Smoothie FAQs

How long does it last?

This taste best when served immediately. However, it can be kept for 3-4 hours at room temperature and then stir it with a spoon or straw. Add crushed ice or enjoy as is.

Can I just put the lemon peels instead of zest in this smoothie?

Naturally, lemon is very sour in taste. If you put lemon peel then you may have to increase dates and thereby increase calories in this smoothie. So, for the perfect balanced taste, I would highly recommend zesting the lemon skin for the best results.

Can I add berries or other fruits in this smoothie?

You may add blueberries and for more variation sometimes I add frozen pineapple for my daughter.

Ingredients

  • juice of 1 large lemon
  • 1 large lemon zest (grated skin of the full large lemon)
  • 1 large ripe banana
  • 3 pitted dates
  • 1 1/2 cups oat milk/hemp milk
  • 1/4 cup raw cashew nuts
  • 1/8 tsp turmeric powder
  • 2 tbsp hempseeds

Instructions

  • In a blender combine all the ingredients (banana, dates, milk, lemon juice, lemon zest, turmeric powder, hempseeds).
  • Blend it extremely smooth until creamy.
  • Pour in the serving glasses and garnish with more hempseeds and lemon zest and serve immediately.

Notes

  • Make sure to use ripe banana which has brown spots on its skin. But do not use over-ripe banana as it might not sweeten it properly and make it a bit on the bitter side.
  • Large lemon is preferred for the nice balanced flavor. Grate its skin for the zest and then juice it thoroughly.
  • If you plan for smaller lemons then go for 2 small lemons for the zest and juice and then adjust as per taste.
  • This recipe taste best when served immediately.
  • You may add crushed ice if you like your cold smoothies.

    I am excited to try this smoothie recipe Gunjan!
    I do have a food sensitivity to bananas. I am wondering if I could sub silken tofu . . . and perhaps add another date or maple syrup as a replacement. Please let me know what your thoughts are and if you have a different suggestion.

      Hi Leah! add another date in place of banana but if you are fine with cashews then please stick to them because cashews are unbelievably delicious in this smoothie. Silken tofu will not work in this recipe. When you add more dates as per your taste just be prepared for a slight color change of the smoothie. Also do not add too many dates because you may want to keep the lemon flavor of the smoothie intact and not make it too sweet so I would suggest just one more date in place of banana. Hope this helps.
