It is basically a 2-hour recipe, but it involves no cooking at all. All you need to do is blend, stir and refrigerate. I love it because I make it once and enjoy it over the week as and when I crave for something sweet and healthy.

Chia seeds – I used tiny black ones for the best results.
Mangoes – I used frozen mango, but fresh mango also works here.
Maple syrup – I like to sweeten this chia seed pudding recipe with maple syrup for a nice caramelized flavor.
Coconut – I used frozen shredded coconut for convenience, but fresh also works in this mango coconut chia pudding. However, for garnishing, you may use coconut flakes too.
Dairy-free milk – I used almond milk to lighten its calorie content. However, any plant-based milk works here, including lightened canned coconut milk.

How to make
Firstly, I blended almond milk, mango chunks and coconut in a blender until smooth and creamy.
Secondly, I poured it into the bowl of chia seeds.
Next, I added maple syrup to it.
Thereafter, I stirred it and let it sit for a few minutes on the kitchen counter.
Lastly, I stirred it again to avoid any lumps and spooned it out into the serving glasses or bowls. Then, I refrigerated for about 2 hours. You may refrigerate overnight for a creamier texture.
When ready, I quickly stirred it again with a spoon and garnished.
Serving tips
This mango pudding with chia seeds taste great when topped with fresh mango chunks and shredded coconut. You may drizzle extra maple syrup or simply top it with chopped dates. It can be converted into a parfait too.

Frozen Mango Chia Pudding with Coconut
Ingredients
- 3/4 cups almond milk
- 1 cup frozen mango chunks
- 2 tbsp shredded frozen coconut
- 1-2 tbsp maple syrup or as per taste
- 3 tbsp chia seeds
Instructions
- In a blender, combine almond milk, mango and coconut. Blend immediately while they are frozen and until creamy. (May take about 1-2 minutes)
- Measure chia seeds in a mixing bowl and pour the blended ingredients into it.
- Stir in maple syrup and let it rest on the kitchen counter for 5 minutes.
- Stir again and spoon out into the serving bowls/jars. Refrigerate for about 2 hours or overnight. Garnish with fresh mango chunks and shredded coconut and enjoy.

Soaked chia seeds softens and its very easy to chew on. I like to chew the seeds but my husbands always drinks it because its gets so soft that he forgets to chew. 🙂
