Suggested timeline for chia pudding

It is basically a 2-hour recipe, but it involves no cooking at all. All you need to do is blend, stir and refrigerate. I love it because I make it once and enjoy it over the week as and when I crave for something sweet and healthy.

timeline schedule to make mango chia pudding.

It brings together nutritious and wholesome ingredients, making it a favorable dish for meal prep because it’s a make-ahead recipe. This no-cook recipe is full of flavors and is deliciously nourishing.

Health benefits of mangoes

Packed with vitamin C, mangoes help boost immunity. It’s a good source of Vitamin A and E, along with copper and folate and several B vitamins. They consist of different types of polyphenols which acts as antioxidants inside the human body. These also support eye health and help improve digestion.

My mango lassi is absolutely refreshing and mango lemonade is a kid-friendly drink. I also bake mango cookies for a fun dessert treat.

Health benefits of chia seeds

They are packed with fiber, protein, omega-3 and other micronutrients. These tiny seeds support weight loss and contain important nutrients for bone health.

Chia seeds can be easily incorporated into our daily diet by mixing them with pineapple jam for snacks or coffee smoothie bowl.

Ingredients

all the ingredients on a wooden board.

Ingredients notes

Chia seeds – I used tiny black ones for the best results.

Mangoes – I used frozen mango, but fresh mango also works here.

Maple syrup – I like to sweeten this chia seed pudding recipe with maple syrup for a nice caramelized flavor.

Coconut – I used frozen shredded coconut for convenience, but fresh also works in this mango coconut chia pudding. However, for garnishing, you may use coconut flakes too.

Dairy-free milk – I used almond milk to lighten its calorie content. However, any plant-based milk works here, including lightened canned coconut milk.

Thereafter, I stirred it and let it sit for a few minutes on the kitchen counter.

everything stirred together in the bowl.

Lastly, I stirred it again to avoid any lumps and spooned it out into the serving glasses or bowls. Then, I refrigerated for about 2 hours. You may refrigerate overnight for a creamier texture.

When ready, I quickly stirred it again with a spoon and garnished.

Soaked chia seeds softens and its very easy to chew on. I like to chew the seeds but my husbands always drinks it because its gets so soft that he forgets to chew. 🙂

Hi Cheri, I have not tried with other fruits but my guess would that strawberries might go well with this recipe.

I love mango smoothies! Right next to mint and yogurt smoothies. Chia seeds are funny things. Here in Bali they show up in Italian sodas and my kids call them “ojitos” – little eyes.
