Ingredients notes

Green peas – fresh or frozen both works in this recipe. If using frozen then make sure to defrost them and drain the extra moisture from the peas.

Red bell pepper – this adds color, flavor and antioxidant to these pea fritters.

Seasonings – simple pantry spices and seasonings are used here. You may substsitute cayyenne with chili powder if desired.

Vegan cheese – I used a combination of two variety of cheeses here. Vegan cheddar cheese is a must. However, you may substitute vegan mozzarella cheese with Mexican style cheese if desired.

Nutritional yeast – you may use a tiny bit of vegan parmesan cheese if desired but nutritonal yeast adds more flavor and nutrition to these green pea fritters.

Bread crumbs – here, I used cauliflower crumbs to make these fritters gluten free and healthier. Panko bread crumbs can also be used in this recipe if desired.

Frequently Asked Questions (FAQs)

How long do they last?

These taste best when served immediately. If kept for long these fritters may become soft. However, you make a dough ahead of time and cover it with food saver. If it dries up too much then grease your palms with little oil while shaping them.

How do I keep fritters from falling apart.

As soon as you shape them gently release them on a warm greased pan. While cooking, these green pea fritters will take their own shape and firm up as well.

Ingredients

  • 1 cup green peas (fresh/frozen)
  • 1/4 cup finely chopped red bell pepper
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 1/2 tsp cayenne powder
  • salt as per taste
  • 1/2 cup vegan cheddar cheese (shredded)
  • 1/2 cup vegan shredded mozzarella cheese or (vegan Mexican style shredded cheese)
  • 1/4 cup nutritional yeast
  • 3/4 cup cauli crunch original (cauliflower crumbs) or (panko bread crumbs)

Instructions

  • Combine green peas in the food processor and roughly crush them. Do not over blend but should be crushed texture.
  • Spoon it out in a mixing bowl and add red bell pepper, garlic powder, cumin powder, cayenne pepper and salt. Mix it with a spoon.
  • Add vegan cheddar cheese, vegan mozzarella cheese and nutritional yeast to it. Mix it well.
  • Now, fold in cauli crunch (cauliflower crumbs) into it and mix well with your hands.
  • Heat a non stick pan at high flame and grease it with a cooking spray. Then, bring it to medium heat. Quickly take about 2 tbsp of the batter between your palms and shape a round flat thin fritter. Place it directly on the warm pan. (The thinner the fritters the crispy they will be). Depending on the size of your pan and how many fritters can fit in one batch, shape more fritters between palms. Place them directly in the warm pan.
  • Cook them until brown from the bottom and a bit firm. Gently flip them with a flat spatula to the other side and let them cook again. Gently scoop them with the flat spatula from the pan and place them on the serving plate.
  • Repeat the above steps for the rest of the batter. Enjoy immediately with ketchup or ranch.

Notes

  • If using frozen green peas make sure to defrost them and dap with kitchen towel to absorb extra moisture.
  • Once the pan is hot make sure to quickly shape the fritters and place them directly on it.
  • Depending on the size of your pan you can cook 4-5 fritters at a time.
  • Red bell pepper should be finely chopped or else they might come in the way of shaping the fritters.
  • If while shaping green pea fritters you feel that the batter is drying up then you may grease your palms while shaping.
  • Make sure to grease your pan for every new batch of fritters.
  • While shaping do not worry about its shape. Try to make them a bit thinner for a crispy exterior texture.
  • This recipe makes 15 fritters and the serving size is 3 per person.
  • These taste best when served immediately. If kept for long these fritters soften.
