This mildly sweetened Sparkling Pomegranate Coconut Mocktail is a refreshing party beverage. Along with being suitable for most of the diets it’s an impressive and a crowd pleaser drink.
With Christmas well spent now it’s about New Year parties to welcome 2017 in a grand way. When we think about parties, beverages top the list.
I am so excited to welcome the New Year in a grand way. I have planned a grand party with all my favorites. It’s funny that I have a mixed set of friends and many love mocktails including me.
Hence,I came up with a versatile beverage that can be enjoyed as a mocktail as well as a cocktail. Just add a shot of rum or tequila and get on the floor to dance unlimited until the clock strikes 12.00 and we scream HAPPY NEW YEAR!!!!!
Ingredients for Sparkling Pomegranate Coconut Mocktail
Pomegranate arils
Coconut water
Plain Sparkling water
Orange Zest
Rosemary herb (to garnish)
How to blend this Sparkling Pomegranate Coconut Mocktail
- For this I used fresh pomegranate arils and pure coconut water as a base and as the main ingredients.
- This Sparkling Pomegranate Coconut Mocktail gets ready in only 2 minutes and mostly it’s about the presentation.
- Firstly, I blended pomegranate and coconut water smooth (straining is optional).
- Then, Filled fancy glasses up to half with ice cubes (you can use decorative ice cubes as well).
- Next, I, poured little blended pomegranate juice and filled the rest of the glass with plain sparkling water.
- Afterwards, I topped it with little orange Zest for color.
- Lastly, To add a slight punch to the drink and garnished it with rosemary herbs.
Refreshing and delicious and not so sweet beverage is what I am looking for my New Year Party. Add sweetener if desired depending on your palate and enjoy.
I am sure by now many of us would be ready with New Year resolution. I am ready too. Hopefully, I follow it throughout the year. My New Year resolution is to spend more time with Yashvi and exercise hard all year round.

Sparkling Pomegranate Coconut Mocktail
Ingredients
- 1/2 cup pomegranate arils
- 1 cup coconut water
- 2 1/4 cups plain sparkling water
- 1 tsp orange zest
- Rosemary sprigs (to garnish)
Instructions
- In blender combine pomegranate arils and coconut water and blend smooth.
- Fill the serving glasses with ice and pour the blended pomegranate juice equally up to half a glass.
- Now fill the rest of the glasses with sparkling water.
- Garnish with more pomegranate arils, orange zest and rosemary herbs as shown in the images.
- Serve immediately and enjoy!
Notes
- I blended pomegranate and coconut water very smooth so the crunch of pomegranate was not felt by us. If you desire after blending you can strain and then follow the rest of the steps.
- This Mocktail is not sweet so if desired you can add little syrup or any sweetener of your choice as per your taste.
- It tastes best when served immediately.

Rosemary! What an interesting earthy herb to add to the mix. That should contrast real nicely with the fruity pomegranate. I might even try rubbing the herb along the glass interior before pouring in the liquids and ice.
