This quick and easy Tofu Red Chard Scramble Sandwich is made with only 10 ingredients and few simple steps. Its kid friendly and great for breakfast or lunch.
Even though kids drive you crazy when it comes to their favorite food, as a parent we always have to make sure to feed them healthy and nutritious food.
Adults aren’t very different either and when it comes to going back to school all ages want the tastiest food ever……because……we are all stressed.
Because…..we have to complete our homework……prepare for semester……perform outstanding…..most of all we don’t have time to cook…… and so on……as a consequence…… fat loaded unhealthy eating becomes an excuse.
But can we just take out 15 minutes of our day to pack our lunches and fix our breakfast to be healthy?
I am sure we all can ….it’s up all there in our minds. So, keeping all these thoughts in my mind and experiencing a preschooler’s fussy attitude for food I came up with Tofu Red Chard Scramble Sandwich.
It’s a winner …..Trust me……make it once and you will come back again and again…. 🙂
This recipe is cooked in such a way that red chard is completely camouflaged, infusing a vibrant color enhancing its appeal quotient…..the only secret is…..don’t mention the ingredients……:)
I used my food processor to finely chop the red chard leaves, so it’s easy to hide in the sandwich, but when I make this sandwich for myself I just chop with my knife because I love anything healthy.
How to make Tofu Red Chard Scramble Sandwich
- Firstly, I chopped all the ingredients extremely fine so that my family can enjoy it wholeheartedly without making any fuss for the ingredients. I have learnt over time to feed them my choice of health food in this way and its working excellent for me.
- Next, I Added a variety of sauces which enhanced the flavor of this scramble recipe and finished it with some seasonings which were absolutely handy in my kitchen.
- Lastly, I added tahini just for fun which turned out to be an excellent idea because it added body to this scramble sandwich recipe and some extra protein along with subtle flavors.
Thereafter, I stuffed it between the bread slices and crisped it in a sandwich maker.
Expert tips:

I simply served this lunch over a weekend to test without telling them anything about the recipe. They loved it so much and were so ready to carry this Tofu Red Chard Scramble Sandwich for their lunch box.
Now, I am all set for the new school year and so happy to get back to a more organized schedule 🙂

Tofu Red Chard Scramble Sandwich
Ingredients
- 1 14 oz pack of extra firm tofu (drained and crumbled)
- 2 cups finely chopped red chard leaves
- 1/2 cup finely chopped white mushroom
- 1/2 cup finely shopped red bell pepper
- 1 tbsp soy sauce
- 1 tsp white vinegar
- 1 tsp sriracha sauce
- 1/2 tsp crushed black pepper
- 1/2 tsp salt
- 1 tbsp tahini paste
Serving
- 12 Bread slices of your choice
Instructions
- Heat nonstick pan and grease it. Add crumbled tofu and cook uncovered until dry and mild golden in color.
- Add red chard and saute.
- Add rest of the ingredients and saute well.
- Cover and cook for 5-7 minutes. Remove the lid and mix again. Cook again uncovered for 3-4 minutes.
- Lastly, add tahini and mix very well until well blended.
- Turn off the flame and place the stuffing between your choices of bread slices and grill the sandwiches or use sandwich maker.
- Serve warm and enjoy.
Notes
- Make sure to chop red chard as fine as possible. I used food processor to chop finely. Measure red chard after chopping.
- Drain and press tofu before crumbling.
- The above calculated calorie does not include bread. You can use any bread of your choice and calories would vary accordingly.
- This sandwich stuffing can be refrigerated in an air tight glass container for 5-6 days.
- If making sandwiches for kids you may use regular ketchup instead of hot sauce. For adults hot sauce adds extra punch to this recipe.

i love red chard so i am with you, i would chop it into bigger pieces. But my husband would wonder, so i would have to mince it! I love this and I agree, 15 minutes a day to make healthy food is totally worth how you feel. xx
