This Roasted Onion Oatmeal Bread is made with the flavor of real onions and whole grain. Its easy and yet flavorful. It pairs well with salads, pastas or for breakfast with hot beverage.
It’s quite an exciting week for us since my Brother in law is visiting us.He has been looking forward to my baking dishes.
My mind has been racing on to bake something delicious, healthy and yet easy recipe so we all can enjoy together. I wanted to bake something that I haven’t baked yet. That way I create a new recipe. Also, I get a chance to get my recipe approved from an additional taster.
Of course I get very excited when I am cooking a new recipe from scratch. I decided on bread baking for two reasons – one my brother in law wanted to see me baking at home (live), secondly my weekly bread baking was due since we ran out of breads at home and I rarely use store bought breads.
It was quite unnerving to decide on a flavored bread made with absolutely healthy ingredients. Of course the time factor is always on my mind. Hence, I finalized on Roasted Onion Oatmeal Bread.
To decide on this bread was a little intriguing. But I took up the challenge. Although, it took me almost a week to decide on the ingredients and the way of baking this bread loaf, I wanted to make sure that the flavors of onion is prominent and subtle at the same time.
Ingredients for Roasted Onion Oatmeal Bread
Red onion
Oat flour
Brown sugar
Salt
Rapid rise yeast
Onion powder
Water
Olive oil
Whole wheat flour
How to make Roasted Onion Oatmeal Bread
My first step was to saute the red onions. I used red onions because they have a subtle sweet flavor and when roasted brown its juices blend into a delicious flavor bringing out the eminent aroma of onions and enhancing the flavor of the bread.
Secondly, In a large mixing bowl I combined oat flour, salt, sugar, onion powder (to enhance the onion flavor in the bread).
In the meanwhile I heated water and olive oil in the microwave.
Then, I mixed in dry yeast in the oat flour mixture. Subsequently, I added the warm water to it to make it a dough kind of batter.
Lastly, I added all the remaining ingredients in the dough maker.
Later, I formed a soft and moist dough and left it covered for about an hour to rise.
Then, I placed it on a flat surface to knead it and shape it.
Subsequently, I baked it in a pre-heated oven for about 30 minutes.
The aroma from my oven reached every corner of my home which increased our appetites and excitement immensely.
I had butterflies in my stomach because I wanted to make sure that this bread loaf tastes as good as it smells. It looked great though and I was quite satisfied with its appearance.
When I took out the bread from the oven my family was hovering over the loaf pan and I quickly sliced the bread.
I again toasted the bread slices in a toaster oven and generously spread butter over them and Voila! The bread loaf vanished within minutes 🙂
Don’t get overwhelmed with the steps. I have tried to explain it in details so that it’s easy for you to follow the directions.
The outcome will be mind blowing……..so go……. head to your kitchen. Bake this bread ASAP because you don’t want to miss out on a delicious healthy bread loaf.

Roasted Onion Oatmeal Bread
Ingredients
- 2 cups chopped red onion
- 1 1/2 cups oat flour
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tbsp onion powder
- 1 envelope rapid rise yeast
- 1 cup water
- 1 tbsp olive oil
- 1 1/4 cups + 1 tbsp whole wheat flour
Instructions
- Heat a nonstick frying pan and grease it with cooking spray. Spread the chopped onion and cook until nicely brown sauteing at intervals to avoid sticking. Turn off the flame and let it cool down to room temperature.
- In the meanwhile in a mixing bowl combine oat flour, sugar, salt and onion powder.
- In a microwavable bowl combine water and oil and heat up to 120 degree Fahrenheit. (You may check its temperature with the help of kitchen thermometer).
- Now add dry yeast to the oat flour mixture and mix very well with a spoon or a hand mixer (at minimum speed).
- Now, add the chopped onions to the dry flour mix and beat at a minimum speed.
- Now add warm water to it (make sure the water is still warm and at 120 degree Fahrenheit). Beat the mixture at medium speed scraping from the bowl at intervals. (The batter should not stay stuck to the bottom of the bowl).
- Now gradually add the whole wheat flour until soft and moist dough is formed.
- Knead the dough very well for 2 minutes on a flat dusted surface. Make a dough ball and let it rest in a greased bowl for 10 minutes turning it once with the smooth surface on top so the dough is well greased when resting. (Rest the dough in a warm drafted place and make sure to cover it).

- Let the dough rise for 60 minutes in the greased 8 inch bread pan and covered. (I used the oven bread proof option to rise). When 15 minutes to 1 hour is left start preheat the oven at 375 degree Fahrenheit.
- Once it has risen, oil brush the top of the bread loaf with cooking spray/olive oil. Place the bread pan in the middle rack of the oven and bake it for 30 minutes or until the tester comes out clean.
- Let it cool completely and cut into desired slices and enjoy.
Notes
- If desired keep 2 tbsp. of roasted onion separately. Once the dough has risen grease the top of the dough with some oil/cooking spray and spread the roasted onion on it and ten put it for baking.
- I used rapid rise Fleishman yeast. Use it dry in the recipe (undissolved).
- Tastes best when toasted in a toaster oven and generously spread margarine/butter.
- Can be stored in an air tight container in the refrigerator for a week. Toast it in a toaster or toaster oven.

This looks amazing! I haven’t ever made onion bread before, but can imagine how wonderful it would smell, especially with the roasted onions. This would be so good with a bowl of soup.
