This warm bowl of Red Pear Butternut Squash Soup with Quinoa is a complete winter vegan meal. It is perfectly simmered in aromatic spices and is made with simple healthy ingredients.

This week has been extremely busy with Halloween and Diwali coinciding at the same time. With festivities all around, I was totally taken up with the preparations and hosting parties.

Even though I was surrounded with loving friends for the entire weekend, I was emotionally still a little out of sync since I was missing my family back in India.

But nevertheless, in the midst of all this I still continued with my passion of cooking and was able to create this comfort food that’s light, healthy and totally delicious for after indulgent weekend.

Red Pear Butternut Squash Soup with Quinoa is a complete meal especially when you want to eat something light and healthy after consuming tons of calories while celebrating festivals.

I personally love red pears because they are juicy, sweeter than the regular ones and soft in each bite. These beauties have outstanding flavor in every bite.

The juice drips all over me and my hands smell of the light aroma of these pears when I chew on them heartily I feel sooooo satisfied and happy. Also these red pears are at their peak right now so this was the best time to develop a recipe. Soup was the first thing that came to my mind keeping with the cold weather greeting us.

Ingredients for Red Pear Butternut Squash Soup with Quinoa

  • Olive oil
  • White sesame seeds
  • Garlic
  • Oregano
  • Butternut squash
  • Red pear
  • Vegetable broth
  • Quinoa
  • Salt
  • Crushed chili flakes

How to make Red Pear Butternut Squash Soup with Quinoa

Firstly, I heated oil in a saucepan and added sesame seeds and garlic ro it.

Secondly, I added butternut squash to it and cooked until soft. With this, I added some nutrition of a vegetable and to give this soup a creamy base. Moreover, when butternut squash is pureed it thickens the soup and gives it a creamy texture and this way I can avoid adding any extra cream to save on calories.

Then, I seasoned this soup with minimum herbs so as to maintain the original flavor of red pears and also to avoid too much dilution of flavors.

Lastly, I completed this soup with boiled quinoa to make it a wholesome meal. At this point i adjusted the salt and chili flakes as per our taste.

We all enjoyed it heartily and our tummies were absolutely satisfied.

Ingredients

  • 1 tsp olive oil
  • 1 tsp white sesame seeds
  • 1 tsp dried garlic
  • 1 tsp dried oregano
  • 2 cups butternut squash chunks
  • 1 cup chopped red pear
  • 2 cups vegetable broth
  • 1 cup cooked quinoa
  • Salt as per taste
  • 1/2 tsp crushed chili flakes (optional)

Instructions

  • Heat oil in a sauce pan and add sesame seeds, garlic, oregano and butternut squash pieces.
  • Sauté and cook covered for 5-7 minutes until squash softens. Add pear and sauté again for 30 seconds
  • Add vegetable broth and boil covered for couple of minutes. Turn off the flame and let it cool.
  • When cooled blend it smooth. Pour back the soup in the same sauce and warm it again in a medium flame.
  • Add rest of the ingredients, mix and serve immediately.
