I have a weakness for breakfast and it’s at the top of my menu. At the same time, I like to explore a variety of ideas for my morning meals. Ever since I discovered the concept of overnight oats, I have been devouring it almost every morning.
Now, that the weather is warming up and the sun shines often overnight cold oats are again the best choice for me.
I chose carrot cake flavor for my oats because its Easter time. Hence, it’s the best time to relish carrot cake in any form and at any time of the day.

As the name suggests, this recipe, is to be made the night before. It is to be devoured the next morning with your favorite topping. For my topping, I opted for coconut whipped cream.
Basically, the idea is to soak the oats in the flavored liquid. Oats absorbs it and becomes soft by next morning. Therefore, it’s easy to digest.

Easy steps to make this vegan overnight oats
Since, I like a smooth consistency of the carrots and did not want to chew on this veggie, I decided to blend it into a carrot smoothie.
Then, I tossed in old fashioned oats into this carrot smoothie.
Lastly, I Filled the oatmeal cups/jars with it and let it rest in the refrigerator overnight.
Next morning, just before serving I stirred it so all the ingredients were well blended.
Then topped it with coconut whipped cream.
The only thing left was now to enjoy every bite of this Carrot Cake Vegan Overnight Oats.
Why I prefer overnight oats?
It can be made the night before and does not need any babysitting.
Secondly, no cooking is involved.
Its versatile, therefore, any variety of flavor and toppings tastes excellent.

Overnight oats are great for the rushed mornings. All we need to do is grab it from the fridge and enjoy it in the car while driving to work.
Carrot Cake vegan Overnight Oats stays good up to 4-5 days in the refrigerator in an air tight container.

It tastes best when consumed cold in the morning. However, if you prefer it little warm then feel free to microwave it for few seconds and enjoy.

- 1/2 cup baby carrots
- 1/4 cup pure maple syrup
- 1 cup unsweetened coconut milk (tetra pack)
- 1/4 tsp cinnamon powder
- 1/4 tsp whole all spice
- 1 cup old fashioned oats
- Coconut whipped cream (optional)
In a blender combine baby carrots, maple syrup, coconut milk, cinnamon powder, and all spice.
Blend it smooth like a smoothie.
Pour the smoothie in a mixing bowl and toss in oats.
Mix well and fill the oats in the serving jars. Cover the jars with their lids or with food saver cling wrap and let it rest in the refrigerator overnight.
Just before serving stir it well. Top it with whipped cream and sprinkle some cinnamon as per taste.
- Feel free to adjust the sweetener as per taste.
- Ground all spice can also be used in this recipe.
- Any toppings like nuts, fruits or seeds tastes good in this recipe.
- If desired gluten free oats can be also be used in this recipe.

What a great idea for Easter morning! Carrot Cake screams spring and Easter to me and our family always has a small quick breakfast before heading to church. Love this idea.
