Asian Farro with Tofu Sriracha Dressing

Farro is the traditional grain of the Mediterranean. It has a nutty flavor and chewy texture.

Asian Farro with Tofu Sriracha Dressing

Ingredients:                                                                                                                  Serves: 4

1 ¼  cup cooked Farro

½ yellow onions (thin length wise cut)

½ orange bell pepper (thin length wise cut)

2 cups Broccoli florets

1 cup rainbow slaw

1 cup sugar snap peas

2 tbsp olive oil

1 tsp chopped garlic (dried or fresh)

½ tsp salt

1 tbsp sriracha sauce

½ tbsp. Asian sweet ginger garlic seasoning

2 tbsp tofu sriracha dressing

Directions:

Heat oil in a frying pan. Add garlic (for garlic flavor oil), onions and sautee until translucent or soft. Then add broccoli and cover in a low flame until soft. Add the rainbow slaw and sugar snap peas, mix well and cover it again for a minute. Toss the bell pepper in the pan.

Cook the veggies in a medium flame. Make sure the veggies are soft but crunchy

Add salt, sweet ginger garlic seasoning, sriracha sauce and mix well for about 2 minutes. Toss in farro and sautee properly. Cook covered for about 2-3 minutes until all the veggies and farro get properly mixed.

Turn off the flame, mix in tofu sriracha dressing so that the farro and veggie are properly coated.

Serve it hot or at room temperature.
