When the sun is at its peak we desire to quench our thirst frequently with some cooling refreshments. It becomes even more welcoming with hydrating beverages.
So, last weekend the weather was warm, sky was clear and my family was engaged in outdoor fun activities. I decided to welcome them inside with this healthy and refreshing beverage with summer flavors in it.
I always focus on seasonal produce and this summer apricot has been on my mind for a while.
Finally, I cam up with a recipe that everyone loves and devours happily.
Ingredients for Apricot Cucumber Chia Smoothie
Chia seeds – It’s know for its protein and fiber content. Its a great substitute for eggs in a plant based diet.
Warm water
Cucumber – hydrating and refreshing with being extremely low in calorie.
Fresh Apricots – A delicious and nutritious summer fruit. This juicy fruit has a tangy flavor along with being mild sweet.
Coconut water – Its hydrating and balances electrolytes. It is a good source of potassium.
Making of Apricot Cucumber Chia Smoothie
In my first step I soaked chia seeds in warm water.
Next, I blended all the ingredients (except chia seeds) in a blender until it was smooth.
Lastly, I blended soaked chia seeds in the blender and serves immediately.
My family loved this idea of refreshing smoothie after tiring outdoor sports. They enjoyed this beverage to their hearts content and they regained so much energy after drinking this that they went out for another round of biking 🙂
If you have apricots in your refrigerator then go ahead and blend this smoothie right now. It will rejuvenate you and provide your body with the required nutrition.
Apricot Cucumber Chia Smoothie
Ingredients
- 2 tbsp chia seeds
- 1/4 cup warm water
- 1 whole cucumber (peeled)
- 1 whole fresh apricot (seed removed)
- 2 cups pure coconut water
Instructions
- Soak chia seeds in warm water for few minutes.
- While chia seeds are cooling assemble all the ingredients in a blender and blend smooth.
- Lastly, add chia seeds to the blender and blend again as smooth as possible.
- Pour into serving glasses and enjoy chilled.

Is there a reason for soaking the chia seeds? I make smoothies all the time for my husband and me with 1/4 cup chia seeds thrown right in

Hi! Since chia seeds expands when soaked in water and forms jelly like consistency soaking chia seeds before blending in smoothie helps in better digestion and gut health. However, many recipes call for blending chia seeds directly is also fine. In this recipe, I soaked chia seeds before blending so this beverage is easily digestible and secondly the consistency of the drink remains fluid and does not thicken. Hope this helps.
