This Popped Amaranth Honey Dew Cucumber Smoothie Bowl is absolutely delightful. Its refreshing and an easy fix for your mornings.

When I am short of time and want something quick to eat I always look forward to smoothie bowls. Completely nutritious, hydrating and perfect on the go meal.

At this moment when I was in a rush, I got a wonderful surprise from 5am provision with a big package of Popped Amaranth waiting at my door step. Aha! That’s it. I quickly whipped up my breakfast was immediately in my mind. 

After that, I practically blended this recipe and enjoyed devouring every bite of it.

Amaranth is a complete protein rich grain with many health benefits. Along with being gluten free it is high in iron and minerals. Also, it is  low in carbohydrate and importantly it is easily digestible. I got it in a readily popped form which tastes even better. Also, it is so versatile and moreover I love its crunchy texture.

How to make Popped Amaranth Honey Dew Cucumber Smoothie Bowl

Coming back to my smoothie bowl recipe –

  • Firstly, I simply blended only 2 ingredients, honey dew melon and cucumber.
  • Then, I added more slices of this hydrating, juicy and fiber rich fruit into my smoothie bowl and popped amaranth for crunchy bites.

I was thrilled to eat this refreshing breakfast just before leaving for my hectic day. This smoothie bowl kept me energized all day and helped me avoid cravings for junk food 🙂

Ingredients

  • 3 cups chopped honey dew melon
  • 1 whole cucumber (peeled)
  • 1/2 cup popped amaranth

Instructions

  • In a blender combine the 2 cups of honey dew melon and cucumber and blend smooth.
  • Pour the smoothie in the serving bowls.Top it with rest of the chopped honey dew melon and generously sprinkle popped amaranth. Enjoy!
