Ingredients

  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp flax seeds
  • 1/2 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 3 large banana
  • 1 tsp vinegar
  • 1 tbsp almond butter
  • 1 tbsp vanilla extract

Instructions

  • In a mixing bowl combine all the dry ingredients (almond flour, baking powder, salt, flax seeds, pumpkin pie spice).
  • In a blender combine (pumpkin puree, banana, almond butter, vanilla, vinegar) all the wet ingredients and blend smooth.
  • Spoon the wet ingredients into the dry ingredients and fold in well.
  • Warm the waffle iron, grease it well and spoon about 1-2 tbsp. of the batter at the center of the waffle iron and cook until crispy and dark golden in color.
  • Repeat the same process for the rest of the batter.
  • Drizzle maple syrup generously on these waffles and enjoy them warm.
