Oil free Vegan Lemon Cookies

I a bowl combine, almond flour, cornstarch, baking powder, salt, flaxmeal, hempseeds and mix well

Blend banana, almond milk, maple syrup, lemon juice, lemon extract, lemon zest

Now, fold in wet ingredients into the dry ingredients and whip it very well. Let it stand for 2 minutes as this will thicken the batter a bit.

Now, with the help of a cookie scoop place the cookies on the prepare cookie sheet keeping 1 inch gap between each cookie.

Place the cookie sheet in the middle rack of the oven and bake it for 25-30 minutes or until the bottom of the cookies are golden in color. Once done, take it out and turn off the oven. Let it cool.
