Vegan Avocado Pasta

Easy creamy Vegan Avocado Pasta is a quick weeknight dinner for pasta lovers. It’s so simple that it comes together in about 15 minutes and is healthy and so comforting.

Avocadoes Basil Coconut milk Nutritional yeast Garlic Lemon zest Lemon juice Salt Pepper Thin/regular spaghetti

combine avocadoes, coconut milk, nutritional yeast, garlic, basil, lemon zest, lemon juice, salt and pepper in the blender and blend it smooth and creamy.

As soon as the pasta is boiled drain it and immediately toss it in the sauce.

Add the reserved pasta water to it and mix everything very well.

Slightly warm it on the stove top and adjust salt and pepper and lemon juice as per taste. Garnish and serve immediately.
