Tofu  Tikka Masala

Marinate tofu in vegan buttermilk and Indian spices and let it rest for 15 minutes.

Then, I placed the baking sheet in the preheated oven at 375-degree Fahrenheit and baked for 30 minutes.

I combined onion, tomato paste, ginger, garlic, cashew nuts and coconut milk in a blender and blended it smooth.

Sautee blended masala in oil in a pan and toss in all the spices.

Once the tofu is baked, I added them in the cooked curry along with salt and the remaining coconut milk.
