Quinoa Chickpea Salad

In a saucepan, boil water and stir in rinsed quinoa. I added salt and garlic powder into it when half done. Cook, fluff and cool.

In this step, I grated the skin of fresh lemon and then squeezed the same in the bowl. Next, I added salt, pepper, oregano, garlic powder to it and stirred it well.

In a mixing bowl, I combine cooked quinoa along with drained chickpeas and all the chopped vegetables.

I tossed in chopped parsley.

I drizzled the dressing over it.

I tossed it and served it.
