Mexican Quinoa Salad

Firstly, I boiled water in a sauce pan and then stirred in rinsed quinoa. I cooked covered until all liquid was absorbed. Then, I removed the lid and fluffed with a fork and let it cool.

I combined all the dressing ingredients in a glass jar and closed it tight. Then, I shook it well and kept it aside.

In a large salad mixing bowl, I combined rinsed black beans followed by all the veggies and cilantro.

I tossed in quinoa into it.

I drizzled the dressing all over it.

I folded in chopped avocado and gently mixed it couple of times.
