Peach Salsa

Luscious, juicy and tantalizing Peach Salsa is a perfect summer condiment. Fresh peaches, jalapeno and herbs together make a spicy, salty, mildly sweet salsa that goes perfect with chips or as a topping on your favorite taco.

Ingredients

2 fresh yellow peaches (pitted and roughly chopped)
1 whole jalapeno (finely chopped)
1/2 cup finely chopped red onion
1/4 cup finely chopped red bell peppers
1/2 cup chopped cilantro
1/2 tsp salt or as per taste
1/2 tsp crushed black pepper
2-3 tbsp freshly squeezed lemon juice

Instructions

In a food processor combine peaches and roughly crush or pulse until a fine chopped consistency is achieved. (Do not over blend because we want crunchy bites of peaches).
Spoon out the crushed peaches in a mixing bowl. Add jalapeno, onion, red bell pepper, cilantro, salt, pepper and lemon juice. Mix well. Adjust the seasoning as per taste. You may squeeze few more drops of lemon juice if you like it on a slightly tangy side.
Serve it with tortilla chips or enjoy it as a salad.

Notes

This taste best when served immediately. You may refrigerate the leftovers in an air tight glass container for about 3-4 days.
You may also manually finely chop peaches but slightly crushing in food processor brings out a nice consistency.
Sweet and but little firm peaches work best here.
Feel free to adjust its taste with salt and lemon juice as per your choice. It should be slightly tangy and sweet along with salty and mild spicy in taste.
