Ingredients

  • 1/2 cup tahini (sesame seeds ground in paste form)
  • 3 tbsp lemon juice
  • 2 tsp lemon zest (grated skin)
  • 1 tsp garlic powder
  • 1 tsp salt or as per taste
  • 1 tsp ground black pepper
  • 2-3 tbsp maple syrup (as per taste)
  • 1/2 cup water

Instructions

  • In a bowl combine tahini paste, lemon juice, lemon zest, garlic powder, salt and pepper. Whisk it. It will start to thicken.
  • Add maple syrup and whisk it. Taste test. It should be mildly sweet and subtle tangy in taste.
  • Pour water and whisk it nicely so that all the ingredients blend well. Taste and use it immediately or refrigerate for later use.

Notes

  • This can be refrigerated in an air tight glass container for about 2 weeks. If it thickens add 1-2 tbsp. of water. Stir and use it as per choice.
  • This recipe makes about 1 cup of the dressing.
