  • In a large mixing bowl combine quinoa flour, wheat bran, salt and dry undissolved yeast. Mix well with a spoon.
  • In a microwavable bowl combine dairy free milk, water, chia seeds, walnut oil, maple syrup and heat for 1-2 minutes (measure with a kitchen thermometer up to 110 degree Fahrenheit).
  • Pour the liquid ingredients into the dry ingredients and beat at medium speed for 2 minutes. Now add whole wheat flour and make dough out of it. On a dusted surface knead the dough for 5 minutes or until smooth.
  • On a dusted surface knead the dough for 5 minutes or until smooth. In a greased bowl turn the dough once so as to coat it with oil. Cover and let it rest for 10 minutes.
  • Now, divide the dough into 12 equal parts and make balls out of each part. Place the balls in a greased round pan. Cover and let it rise in a warm place for 40 minutes or until double in size.
  • Preheat the oven at 375 degree Fahrenheit. Brush the top of the rolls with little coconut milk and sprinkle more chia seeds. Place the pan in the middle rack of the oven and bake for 20-25 minutes or until golden brown in color. Turn off the oven, take out the pan, cool it on the wire rack and enjoy.

Notes

  • Make sure the temperature of the liquid is close to accurate for a good rise.
  • I used Fleischmann’s Rapid Rise Instant yeast (fast acting) that comes in sachet.
  • These rolls taste best when consumed the same day but can be stored in an air tight container at room temperature for 4-5 days.
  • This recipe makes 12 rolls and the serving size is 1 roll per person.
