Fruit&Nut Layered Oatmeal Pudding

Ingredients

  • 2 large ripe banana
  • 3 1/2 tbsp maple syrup
  • 2 cups unsweetened almond milk
  • 3/4 cup quick rolled oats
  • 1 tbsp unsweetened cocoa powder
  • Dash of salt
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts
  • 1/3 cup dairy free chocolate chips

Instructions

  • Slice the bananas in the round shape. Drizzle about 1 ½ tbsp. maple syrup over the bananas and mix gently just so the honey is well coated to all the pieces. (Make sure the banana pieces do not break). Keep it aside.
  • Heat the milk in a saucepan in a medium flame and add the oats just before the milk starts to boil. Add the cocoa powder and keep stirring until there are no lumps. Add the vanilla extract, salt and the left over maple syrup and keep stirring till the milk thickens and the oats are soft. Remove from the stove and let it cool for few minutes.
  • In the meantime in a glass bowl put the first layer of half of the bananas at the bottom. Then sprinkle ¼ of the walnuts on the banana just enough so that all the banana pieces are roughly covered with the walnuts. Pour half of the oats mixture over it and spread it all over the layer gently with a spoon so that the bananas and the walnut are well covered. Repeat the same layering procedure. Then top it with the remaining walnuts and lastly sprinkle chocolate chips over the pudding.
  • Cover it with a lid lightly and refrigerate it for at least 5 hours before serving.
