Ingredients

  • 4 tbsp flax oil
  • 1 tsp crushed pepper flakes
  • 1 tsp dried basil
  • 1 tsp dried garlic
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp lemon juice
  • 2 cups chopped mixed green salad ( baby spring mix )
  • 1 1/2 cups cooked farro
  • 3 whole fresh figs
  • 1 tbsp chopped raw pecans
  • 1 tbsp pumpkin seeds
  • 2 tbsp dried cranberries

Instructions

  • In a bowl combine flax oil, crushed pepper, garlic, basil, parsley, salt, lemon juice and mix well and let it stand for few minutes.
  • Roughly chop the salad leaves and cut the fresh figs into 4 slices.
  • Mix all the salad ingredients in a salad bowl and add the above dressing and mix well so that the salad is well coated with the dressing.
  • Serve and Enjoy!!

Notes

  • Olive oil can be substituted for flax oil but the calorie and nutrition content will slightly differ than mentioned in this recipe. I used flax oil to add nutritional value to my salad and I am very fond of the particular taste of flax oil and it really goes well with this salad recipe.
  • Dried herbs can be substituted with fresh herbs. I prefer using dried herbs of this particular variety because of the special aroma and flavor and my dried herbs also don’t go wasted. It stays longer and hence for me it is cost effective.
