These vegan and gluten free nutritious Strawberry Quinoa Breakfast Bars are an absolute delight. It’s the prefect grab and go breakfast and serves well as a snack for those odd hours.
In a blender combine strawberries, maple syrup, vanilla extract and olive oil. Blend it smooth.
In a large mixing bowl combine quinoa flakes and salt and set it aside.
Fold in the liquid ingredients to the dry ingredients and mix well with a spoon. Set aside and let it soak for few minutes.
Preheat the oven at 350 degree Fahrenheit. Prepare the 8*8 inch square pan with a parchment paper.
Now, pour the batter into the square pan and spread it evenly.
Place the baking pan in the middle rack of the oven and bake it for 30 minutes or until the tester comes out clean.
Let it cool completely and cut into desired pieces. Save the bars in the refrigerator in an air tight container for up to 5 days.
