  • 1 1/2 cups chopped fresh strawberries
  • 1/8 cup vegan almond yogurt (plain)
  • 2 medium bananas (mashed)
  • 1 tsp brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt


  1. In a blender add 1 cup chopped strawberries and blend smooth.

  2. Preheat oven at 375 degree Fahrenheit and prepare a cookie sheet by greasing it well.

  3. In a large bowl whip yogurt. Pour the blended strawberries and mix.

  4. Now, add mashed bananas, sugar and vanilla extract.

  5. In another bowl combine almond flour, baking powder and salt. Mix very well until there are no lumps.

  6. Now, fold in dry ingredients into the wet ingredients. Mix well until the batter is well blended. The consistency of the batter would be thick and sticky.

  7. Lastly, fold in the rest of the chopped strawberries and mix gently.

  8. Now, drop about 1 tbsp. of the batter on the cookie sheet.

  9. Place the cookie sheet in the middle rack of the oven and bake for 40 minutes or until golden in color.

  10. Take out the cookie sheet and let the cookies cool down completely. Enjoy!
