Broccoli in Strawberry Sauce

This sweet, salty and tangy Broccoli in Strawberry Sauce is a fruity flavored vegetable entree. Its a unique combination with great flavors and amazingly deliciousness.

Ingredients

  • 1 tbsp olive oil
  • 1 tsp chopped garlic
  • 1 tsp white sesame seeds
  • 1 tbsp chopped fresh basil
  • 1/2 cup chopped scallions
  • 3 cups chopped fresh strawberries
  • 1 tsp maple syrup
  • 1 tbsp vegan Worcestershire sauce
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha sauce
  • 1/2 tsp salt
  • 1/2 tsp crushed black pepper
  • 1/4 cup water
  • 1 cup broccoli florets

Instructions

  • Heat oil in a nonstick wok/pan and add garlic, sesame seeds and basil. Just when the seeds start to crackle add scallions and saute well.
  • Add strawberries, mix, and cover and cook until the strawberries start to release its juice.Add maple syrup and mix. When the strawberries are soft mash them in the pan with a food masher. (Make sure to mash the strawberries very well). Add rest of the ingredients to the strawberry sauce (except broccoli).
  • Once it comes to a boil fold in broccoli and make sure that the all the broccoli florets are properly coated.
  • Cover again and cook till broccoli softens a bit. (Should not my mushy and the crunchy texture should be maintained).
  • Serve hot over your choice of rice/quinoa.

Notes

  • If desired you may reduce the quantity of vinegar to ½ tbsp.
  • If you think your strawberries aren’t sufficiently sweet add ¼ tsp sugar.
