This sweet, salty and tangy Broccoli in Strawberry Sauce is a fruity flavored vegetable entree. Its a unique combination with great flavors and amazingly deliciousness.
Heat oil in a nonstick wok/pan and add garlic, sesame seeds and basil. Just when the seeds start to crackle add scallions and saute well.
Add strawberries, mix, and cover and cook until the strawberries start to release its juice.Add maple syrup and mix. When the strawberries are soft mash them in the pan with a food masher. (Make sure to mash the strawberries very well). Add rest of the ingredients to the strawberry sauce (except broccoli).
Once it comes to a boil fold in broccoli and make sure that the all the broccoli florets are properly coated.
Cover again and cook till broccoli softens a bit. (Should not my mushy and the crunchy texture should be maintained).
Serve hot over your choice of rice/quinoa.
Notes
If desired you may reduce the quantity of vinegar to ½ tbsp.
If you think your strawberries aren’t sufficiently sweet add ¼ tsp sugar.
