Sweet and Spicy Black Bean salad with Papaya Sauce is delicious. By adding black salt and roasted cumin powder I gave it an Indian touch. This is perfect go to lunch meal or a quick dinner which can also be enjoy as a dip with tortilla chips. I came up with this salad recipe because of my love for papaya and I totally devour the sweet, spicy and salty flavors so when I add fruit into my salad it fits perfectly to my taste.
*Papaya Sauce Ingredients
Combine all the ingredients of Papaya sauce in a food processor and puree it for approximately 2-3 minutes or until smooth.
Keep the sauce aside and let it blend in its own flavor.
In the meantime, Combine onion, black beans, cilantro in a mixing bowl.
Add the papaya sauce to the salad and mix well so that the salad is properly coated with the sauce.
Toss in avocado and lemon juice.
Footnote: This salad can be prepared ahead of time and kept in the refrigerator. Except for avocado mix all the ingredients including papaya sauce. Toss in avocado just before serving.
